filipino chicken adobo
Smells like a pinoy classic.
Ingredients
Serves 4 people
- 2 lb chicken (legs and thighs)
- 3 pieces dried bay leaves
- 5 cloves garlic, crushed
- 1 cup water
- 0.5 cup soy sauce
- 0.5 cup palm vinegar (substitute white vinegar)
- 1tsp brown sugar
- 1 tsp whole peppercorn (substitute 2 tsp ground black pepper)
- 1 lime, juiced
Instructions
Crockpot
- Combine ingredients
- Cook on high for 4 hours (or low for 6)
- Skim oil before serving
Stovetop
- Heat cooking pot → pour in oil
- Mix water, soy sauce, vinegar, sugar, and lime juice
- When oil is hot, pan-fry chicken for 2 minutes each side
- Pour in liquid mixture, add garlic → bring to boil
- Add bay leaves and peppercorn → simmer for 30-40 minutes until chicken is tender
- (optional) pan-fry cooked chicken with oil, garlic, and sauce to make “dry adobo”
