Ingredients

Serves 4 people

Instructions

Crockpot

  1. Combine ingredients
  2. Cook on high for 4 hours (or low for 6)
  3. Skim oil before serving

Stovetop

  1. Heat cooking pot → pour in oil
  2. Mix water, soy sauce, vinegar, sugar, and lime juice
  3. When oil is hot, pan-fry chicken for 2 minutes each side
  4. Pour in liquid mixture, add garlic → bring to boil
  5. Add bay leaves and peppercorn → simmer for 30-40 minutes until chicken is tender
  6. (optional) pan-fry cooked chicken with oil, garlic, and sauce to make “dry adobo”
